Can the Trailer Valet 5X # STC-V211 Be Used on a Trailer with a 5,100-lb GVWR

we have a trailer that is gross weight of 5100 will the valet 5x swivel jack work

The Trailer Valet 5X Swivel Jack and Trailer Mover # STC-V211 that you referenced has a maximum Tongue Weight (TW) capacity of 500 lbs. Since a properly loaded trailer should have a TW of 10-15% of the loaded trailer weight, at 5,100 lbs you might be going over the weight capacity of the Trailer Valet 5X if your trailer is fully loaded.
If you don't plan on loading your trailer to the GVWR then you will be able to use it. Just make sure that your TW stays below the 500-lb mark.
