I went out to our warehouse to take a look at the Convert-A-Ball Ball Mount # AMSC2 referenced in your question.
I measured a distance of right at 2- 3/4 inches from the center of the hitch pin hole to the back of the shank and 4" from center of hitch pin hole to closest edge of ball platform. I have included a video that shows these measurements as well. This sturdy steel ball mount is designed for 2 inch trailer hitch receivers and has a gross towing weight of 10,000 pounds. I have also attached a short video demonstration on this product that you can look at.
