For bunk style guide-ons such as # CE27600 the bunk board and boat should only barely touch if at all. There isn't a hard and fast rule that says it should be this many inches. But since guide-ons are not meant to support weight like a regular bunk you don't want it so close that the boat could damage the system, but they have to be close enough to help guide the boat on accurately.

If it is as rough as it sounds like then I would say maybe 3 inches on each side would work. And if you determine that is too far or not far enough after a few tries of loading the boat then making adjustments is easy enough.
