The best way to transport a heavier Fat Bike like your 63 pound Easy Motion Evo Big Bud Pro with your 2016 Ford Escape is with a hitch-mounted bike carrier.
If you do not already have a trailer hitch installed on your Ford Escape, I recommend looking at the Draw-Tite Class III Max Frame Round Tube Receiver Hitch # 75758. This 2 inch hitch receiver has a tongue weight capacity of 675 pounds and is custom-fit for your vehicle, which means no drilling will be required during installation. I have attached an installation video on your vehicle for you to check out.
Then for a hitch-mount bike rack that has the weight capacity to support your Big Bud Pro, I recommend the Hollywood Racks Sport Rider SE Bike Rack # HLY84FR. This particular rack is designed specifically for electric fat bikes and has a weight capacity of up to 80 pounds per bike. It can support a maximum wheel base of 60 inches and a maximum tire width of 5 inches. It includes both a hitch lock and cable lock to secure the rack to your vehicle and the bikes to the rack.
The highest rated trunk-mount bike rack for your Ford Escape is going to have a weight capacity of 35 pounds per bike, so it will not be an option for your bike unless you are able to remove the battery and doing so will take it below this weight limit. If you are able to do this, then I recommend taking a look at the Yakima FullBack 2 Bike Rack # Y02634. This is a quality but nicely priced rack that can hold 2 bikes of up to 35 pounds each. It is confirmed to fit your vehicle and I have attached a video demonstration on this rack for you to take a look at.
