I was just curious why the GM under-mount costs more then the model for the Ford ? Is it more substantial or is it just one of those thing?

The Ford part that is the equivalent to # RP30868 for the 2011 Chevy and GMC full-size trucks that you have referenced, is actually part # RP30126 (2011 Ford Super Duty). The GM part is rated for 18,000 pounds while the Ford part is rated at 25,000 pounds.
If you wanted the entire package which includes the underbed rails to mount a 5th wheel hitch and a gooseneck hitch, you would need Elite Series Under-Bed Gooseneck Complete Hitch, # RP30158-68 (rated at 25,000 pounds). I have included a link to the instructions for this hitch for reference. The compatible 5th wheel hitches are # RP30144, for a slider and short bed truck, or # RP30921 for a stationary hitch and long bed truck.
