I have Dexter 6000 pound axles on my fifth wheel with 8 lug 16 inch wheels. What replacement electric brake unit do I need

Since you have 6,000 lbs axles the # AKEBRK-7R-SA for the right hand side and # AKEBRK-7L-SA for the left hand is what you need. These brake assemblies are self-adjusting and only require an initial set-up at the time of installation with no periodic adjustment needed.
