The first thing that you will need to get for your 2001 Subaru Forester is a tow bar. I recommend using the Blue Ox Alpha Tow Bar # BX7380 since it comes with the safety cable that you will need to use.
The Base Plate Kit, part # BX3605, will work well with the Alpha Tow Bar and has a nice clean look.
You may need to use a supplemental braking system in your Subaru for when you come to stop. I recommend going with the Roadmaster Even Brake, part # RM-9400. This is a wireless supplemental system that applies the brakes on your Forester by the robotic arm depressing the brake pedal inside the vehicle. The best part about this product is that it can be used in a variety of vehicles.
The last thing that you will need is a tail light system to install on your Forester. Since there are no custom wiring harnesses for your vehicle, I recommend that you use the Custer Wireless LED Tow Light, part # LIW-LDTL. This light will just install on the top of your Subaru and the connector will install at the back of your RV.
I have attached some demonstration videos and a helpful article for you as well.
