I suggest the B&W Turnoverball Underbed Gooseneck Trailer Hitch # BWGNRK1067 for your 2007 Chevrolet Silverado 2500. It's rated up to 30,000 pounds and is one of the most popular gooseneck hitches we carry. It gives you complete bed access when not towing by turning the hitch ball over and storing it in the ball hole upside down.
Another great feature of the B&W is that if you ever switch to a fifth wheel trailer you can add the B&W Companion Fifth Wheel Trailer Hitch, # BWRVK3400 for the slider if you have a short bed or # BWRVK3500 for the fixed hitch if you have a long bed truck. The Companion hitches are designed to install directly into the Turnoverball gooseneck hitch.
To install a 7-way trailer harness in your truck's bed the Hopkins Gooseneck # 41157 you mentioned is a great choice.
