For your 2000 Chevrolet Silverado 1500, I recommend the Reese Quick-Install Custom Base Rails and Installation Kit for 5th Wheel Trailer Hitches, # RP50064-58. This is a no drill installation to your frame, but obviously there will still be drilling for the rails in the bed.
For your hitch, I recommend the Reese 5th Wheel Trailer Hitch - Single Jaw - 20,000 lbs, # RP30928. This has the height adjustment from 13 to 17 inches, the double jaw that completely surrounds the trailer kingpin to ensure connection which gives minimum play at the hitch connection point. It also has a tab on jaw handle that is lockable with a padlock like # ML1KA. This will work great with a sidewinder. You may want the custom Sidewinder Wedge Kit for Reese # RP44FR for a custom fit.
You may also want to consider the Curt 5th Wheel/Gooseneck Wiring Harness 7-Pole, # C56000, to give you a 7 way in the bed of your truck for quick and easy connection.
