What is the thread pitch/size of trailer balls with a 3/4inch shank?

If you are buying a new ball such as # 19258 then its thread pitch doesn't matter because it comes with a compatible nut. This ball has 16 threads per inch which is about 0.05 inches from the top center of one thread to the top center of the next.
