We have the Ranch Hitch Universal 5th-Wheel-to-Gooseneck Coupler Adapter with 8 inch Offset for Short-Bed Trucks, # AM3139. The bottom connects to a standard 2-5/16 inch ball and the top connects to a 5th wheel trailer pin box. The 8 inch offset allows for more clearance on short bed trucks like the 6-1/2 foot bed on your 2007 Toyota Tundra.
While the offset will give you 8 more inches of clearance, you still might not have enough clearance to tow a 5th wheel trailer with a gooseneck hitch. You will have to measure to be sure. Measure the distance from the center of the gooseneck ball to the truck cab. Add the length of the offset, 8 inches. Then measure the width of your trailer and divide by 2. Subtract that from the first two measurements you added together to get the clearance. If you get at least 4 inches or more of clearance, it will work. If you are under 4 inches of clearance then you will not have enough clearance to use the adapter and tow the 5th wheel trailer.
