According to Derale, the 5.3 liter engine used in 2007 and 2008 uses a filter thread size of 22 x 1.5mm and an O-ring size of 2-3/4 inches. The Derale Engine Oil Coolers # D15405 is compatible with oil filters with those dimensions so it would work well for you.
The easiest way to run an oil pressure gauge would be to use the info that is present at your OBDII port by using an Insight part # EP84030. Running a pressure gauge off of the sandwich adapter is not something we would be able to recommend. The # BY40402 is the only route we offer for adding a oil pressure gauge to a vehicle. You would also get the option to monitor several other engine/transmission parameters as well.
