1975 Ford F250 long bed- can I put in a fifth wheel hitch in that truck?

Sure you can! To install a 5th wheel hitch in your truck bed, you'd need the Reese Universal 5th wheel install kit, part # RP30035. The instructions relating to your truck are shown on sheet 11 of the instructions I've linked for you.
To install a 7-way trailer connector in the bed of the truck, you'd need part # 20023.
