I have several options for you to store and haul your gear on a 2022 Hyundai Kona but I won't be able to say for sure that you can fit this much stuff in any one box or basket as the size of the stuff is obviously going to vary from person to person. I also don't really like the idea of mixing skis and other luggage inside the same box as the risk for damage is much higher. You can absolutely use the Thule Arcos # TH25YE on both of your BMW X5s. Provided they have either a 2" or 1-1/4" trailer hitch on the back.
As far as trunk access goes, the platform does not have a swing away feature. We do offer swing away adapters that can be used like part # SAR36VR. This will allow the carrier to swing away for full trunk access. I would however caution against the use of an adapter. Using this will effectively decrease your hitches carrying capacity by half.
