I went out to the warehouse and pulled the Tow-Rax 2-Cup Drink Holder, part # TWSP2CH, and took some measurements for you, which you can also see on the included image. The thickness of the material is 2.62 mm. The cup holder is 8" long x 4" deep x 2-11/16" tall. The dimensions of the upper back plate is 5-7/8". The cup hole diameter is 3" and the part weighs 2 lbs.

The cupholder portion of the Optronics # 2409171B is adjustable between roughty 2-1/2" and 3-3/4" so this would be a good fit for you if you're referring to the beverage holder dimensions. The casing dimensions on this cup holder are roughly 3-3/4" x 3-7/8". I've gone ahead and pulled the Octogon Boat Table # 315-DSI-KF from our inventory to measure for your specific question. There is a depth of 2-1/4 inches from the top of the cup holder to the very bottom. If you notice in the pictures, there is a ring at the bottom. From the top of the cup holder to the start of the ring, there is a depth of 1-3/4 inches. At the bottom the ring reduces the 3-1/2 inch diameter of the top section of the cup holder to 2-3/4 inches in diameter.

The diameter of the holder for the coupling ball on the Replacement Bike Adapter ezHitch Cup # 50103033 is 1.14" which is just over 1-1/8". The diameter of that mounting hole it 7/16" and then the overall thickness is 1/4" but that little indention looks to be about 3/16". The Swagman E-Spec # S94FR will work with any step thru e-bike that weighs 70-lbs or less, so the step-through is not an issue; however, on some bikes a bike frame adapter bar like the # 64005 will be required.
