We do have hitches available for campers like your 2019 Coachmen Viking LS Camper. These hitches mount to the frame, so you'll need to take that measurement into consideration.
I recommend the Curt Adjustable Class III, part # C13701. It adjusts from 18" to 51" and mounts to box frames, C-channel frames, or I-beam frames. It has a 2" receiver and can be bolted or welded on. I've linked to a video review of this below.

The most important factor when picking out a replacement leaf spring for a trailer is the axle capacity Charles and then after that you want to match the correct length if possible. So for your 2,800 lb axle the closest capacity option we have would be 3,500 but we don't have an exact match length wise so best option would be the part # e54SR which is 25-1/8 inches long. The Voyager 2.0 like the # ASA37YR does support up to four cameras. However, the only option is to add the # ASA64YR. There are no true sidemarker cameras available. The Furrion Vision S Wireless RV Backup Camera System w/ 3 Cameras # FCE48TASL-05 would give you the side cameras you're looking for and you can add # FCN48TASF for the 4th camera.

The Road Armor Shock Absorbing Equalizer Kit # LC696740 has a 6" spacing so you'd only be taking on a 1/4" difference horizontally for both sides, which should be within tolerance for the shackle straps. Switching to a longer shackle strap like 3-1/8" # TRSL313 could help maintain your current height, but you'll run the risk of the straps sitting out of tolerance compared to the equalizer. Finding the correct replacement slide-out seal for your 2013 Coachmen Freedom Express 192 RBS will require removing the existing seal to measure its dimensions and find the shape. There isn't a replacement wheel we can offer for an AL-KO jack; the best we can do is a new jack, and I assume that is an A-frame jack. For one with a wheel use A-Frame Trailer Jack with Caster Wheel # DL74MR, which is a 1,000 lb capacity jack.

I reached out to Yakima and was informed that there unfortunately is not a compatible landing pad for Q-Towers available so the only way to mount your Yakima crossbars would be to also get new towers. Yeah, I agree if you are sagging on one side you've got a spring issue. We do not have any springs that would be a step up from the Dexter 072-013-00 you currently have installed. That spring is 20-1/2" long and rated for 1,400 lbs per spring. Our closet option is the 3-Leaf Double-Eye Spring for 2,000-lb Trailer Axles item # e84SR but they are only rated for a 1,000 lbs per spring. That won't help the problem.
