The Dometic Ultra Breeze Trailer Roof Vent Cover # DMC38FR is designed to cover your vent but it, along with every other brand, will not allow the vent to 100% fully open since they aren't tall enough. Manufacturers have stated that the vent lid opens far enough that the vent will not have a decrease in performance. Since the # FV802250 is a manual lift you'll just want to make sure you aren't forcing up when it's touching the cover because you can end up braking the lift arm.

I contacted Dometic about the Water Heater Door Conversion Kit # DMC84FR fitting your Fogatti FS06B1, and they cannot recommend using it with anything but the Dometic # DMC74FR. It was designed specifically to fit this water heater.

The only way to know if a door handle will fit your RV is to measure the cutout and get the corresponding fit. The Bauer Products Motorhome Door Lock - Black Item # BA64FR you linked to has a required cutout dimension of 5-1/4" wide x 4-1/2" tall.
