The EcoHitch Stealth Trailer Hitch Receiver # EH65SR is the only option from EcoHitch for your 2023 Subaru WRX. This differs from the EcoHitch Invisi Trailer Hitch Receiver # 306-X7257 you were looking at in that the Stealth has a removable receiver that sits below the bumper. When securing the Stealth receiver to your WRX there is actually a bolt you'll need to tighten down and you'll use that hole in your bumper you referenced to accomplish this.

So there isn't an exact amount of material needed to be removed when enlarging the access hole on your Subaru WRX when installing the Curt Trailer Hitch Receiver # C84ZV.
You'll use a die grinder for this and you'll just enlarge it until you can get the 1/2" fasteners through. Typically this isn't much, about 1/4" or so, but they don't give an exact amount because that is very, very difficult to quantify when doing the install. view full answer...

I went ahead and linked an installation video for the EcoHitch Invisi Trailer Hitch Receiver item # 306-X7257 on a 2019 Subaru WRX. These are the same steps as your 2021 WRX. You will see around the 16:10-16:50 part of the video that the bolts are pushed up against the frame to hold them in place while the washers, lock washer, and hex nut are tightened and then later torqued on.
