I am not sure I understand what you are referring to as the "oven assembly" but we don't very well carry replacement parts for ovens, especially ones from a 1971 RoadRunner Trailer. If you can find out the manufacturer of the oven you have and they are still in business then you can contact them directly in order to see if replacement parts are available. However, this would be quite a reach so odds are you are just going to have to replace the oven entirely.

The Wall Sconce LED Reading Light for RVs part # DG52641VP that you looked at delivers 150 lumens which is a good bright light. It would work out really well being placed over a sink or stove for better lighting when using those area. The compact size also lends itself to being placed in those areas without getting in the way. If the oven/range you have is designed for LP (low pressure) propane then the # CAM59013 that you referenced would be what you'd need as it provides the 11 inch of water column for this application.

The picture I attached shows the cover in use and also folded up and out of the way. Since we don't carry fittings that connect to 1/2" NPT threads I can only give you a recommendation on the regulator and hose and you'll need to get a fitting to go from the hose to the 1/2" NPT fitting from your local hardware store.

For your setup the MB Sturgis 2-Stage Propane Regulator # 108221 will work perfectly. Its 2-stage design will reduce the pressure to the needed 11" WC and it has a maximum flow capacity of 400,000 Btu, plenty for your application.

The propane to natural gas conversion kit that you use with the Furrion 2-in-1 Range Oven part # FSRE21SABL will need to meet two criteria. It will first need to reduce the pressure down to between 10" and 13.8" WC. This is pretty common so that should not be too much of an issue. The other criteria that will need to be met is the correct size fitting.
