In most all situations this will not be an issue. There is the small chance that the vent on the Valterra Water Inlet for RVs part # A01-2003VP would allow water to seep out in the event of an extreme bouncing situation or at extreme angles with an off road trailer.

Check if the strainer is clogged with debris.
Check if there is water in the tank or whether air has collected in the hot water heater.
Check if the inlet tubing/plumbing is sucking air at plumbing connections - vacuum leak?
Is the inlet/outlet plumbing severely restricted or kinked?
Check proper voltage with the pump operating: + or - 10%

In regards to the Fogatti RV Tankless Water Heater part # LSB44FR, there should be some sort of shutoff valve on the gas pipe, inlet pipe and outlet pipe per the instructions. Typically there isn't anything in between the city water inlet and your hot water heater/appliances so you very well could install your new hose closer to the appliances/hot water heater,
If you do choose to do this, I also recommend that you also install a water pressure regulator like # A01-1120VP. This is meant primarily to protect your plumbing system from potentially damaging water pressure.
