My concern is getting the inside plastic trim off to be able to get to the bolts. Is that hard to do without breking or cracking that trim. 2000 model FORD F-250 SUPER DUTY.

Removing the necessary trim pieces usually isn't too difficult. Take your time and don't get too rough, and you should be able to remove them without incident.
