If your 2014 Sierra is a 2500 or 3500 model, the Pollak Twist-in 7-way trailer connector you referenced, part # PK11916 will indeed work. You'll remove the dummy cover in the bumper, and twist in the connector. The factory wiring harness, usually located on the driver's side frame rail would plug into the back of the trailer connector after it's protective cap is removed.
If you have the 1500 model, you can use the # HM40975. Other than the lack of the dummy cover and the existing cut-out in the bumper, the harness would bolt to the underside of the bumper and would plug in as described above.
