What happens if I put 300lbs of tongue weight on a 200lbs rated hitch will the hitch break ?

Not right away, but over time cracks will develop and the Curt Trailer Hitch Receiver # C11540 will fail if you put 300 lbs of tongue weight on this hitch that is rated for just 200 lbs. Your vehicle frame may also be damaged, and anything on the hitch at the time of its failure will also smash to the ground as you are travelling. Please do not put more than 200 lbs of tongue weight on the Curt # C11540.
