The best base plate kit for your 2020 GMC Canyon 4WD without adaptive cruise control is going to be the Roadmaster Direct-Connect Base Plate Kit item # RM-523182-5. These direct-connect brackets provide attachment points for your Highthawk tow bar. The arms are removable for a clean look when you are not flat towing your Canyon.
This base plate kit will work great with the Roadmaster Nighthawk All Terrain, Non-Binding Tow Bar item # RM-676 you mentioned. This tow bar kit has all the safety chains and wiring you will need to connect your RV to your Canyon.
You will also need the Roadmaster Universal Hy-Power Diode Wiring Kit item # RM-152 you were looking at. It comes with diodes included to prevent feedback that could damage the electrical system on your RV. Since the battery on your GMC Canyon also needs to be disconnected during flat towing, I recommend using the Roadmaster Automatic Battery Disconnect with Switch # RM-766, which will make the process as easy as flipping a switch. This is a much better solution than disconnecting and re-connecting your battery at each stop.
For a permanent braking system you will want to use the Demco SBS Stay-IN-Play DUO Supplemental Braking System item # SM99251. The Stay-IN-Play uses an inertia sensor to detect when you decelerate which in turn will activate your GMC's brakes. This system is made in the USA and comes with a 5-year warranty.
You will also need a highlow adapter. I have linked an article below that will help you find the right one.
