I do have a solution for you, but there are a few things you should be aware of before you carry your ebike on your vehicle. According to the owner's manual, your 2014 Volkswagen EOS has a maximum tongue weight of 200 lbs. If you are carrying your Rad Power Mini ebike, this means the weight of your bike and the weight of the hitch bike rack cannot exceed 200 lbs. I did some research and your ebike weights approximately 67 lbs. Therefore, the hitch bike rack that you use must be able to support a bike that weighs at least this much. Because of this, you will not be able to use a hanging bike rack to carry this bike. Your frame is not compatible with a hanging bike rack without a frame adapter and I have not found a frame adapter that is rated to carry bikes heavier than 50 lbs. This means that you will have to go with a hitch platform bike rack instead.
My hitch bike rack recommendation is the Thule EasyFold XT Bike Rack for 2 Electric Bikes - 1-1/4" and 2" Hitches - Frame Mount, part # TH903202. It is a 1-1/4" hitch bike rack that comes with a ramp and is rated to carry bikes up to 65 lbs. You will have to remove your Rad Power Mini ebike's battery to keep your bike under the EasyFold's weight limit, but we already recommend you do that before you transport your bike.
