What exactly will this set-up power in my RV ? Lights, water pumps, tv and refrigerator?

The Go Power Solar Elite Charging System # 34282184 can provide up to 2,000 watts to typically a battery bank to charge them. So you wouldn't normally run your accessories directly from the panel and instead would from the batteries this kit keeps charged up. So what you could power with this setup would largely depend on the batteries you went with, but this kit will do a really great job keeping the batteries topped off so that you can use the accessories you mentioned as needed.

I love this full kit but I’d like to have flexible panels instead. I don’t see a kit with flexible panels, controller, inverter and such. Thanks
