There are 2 hitches available from Curt that are confirmed to fit your 2020 Subaru Crosstrek.
A Class II hitch # C12184, it has a 1 1/4" receiver tube opening and is rated 350 lbs TW, and 3500 lbs GTW.
A class III hitch # C13382, it has a 2" receiver tube opening and is rated 525 lbs TW, and 3500 lbs GTW.
Both hitches have a hidden cross tube, which not only provides better ground clearance, but it also looks really nice on the back of the Crosstrek.
If I were looking for a hitch for my Crosstreck, I would go with the class III hitch, there are many more options for accessories. Whether you want to take some bikes with you and hit the trail, make some room on the inside and put a cargo carrier in the hitch and move the gear to the outside, or tow a trailer the 2" receiver is going to be more versatile and easier to mount up your accessories.
To complete your towing setup you can use Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C56040 to get the light signals to your trailer.
You'll also need a ball mount and trailer ball, I attached an article with some helpful information of how to measure to get the correct rise or drop to match up to your trailer. The trailer ball is determined by what size coupler is on your trailer.
