Is Bumper Trim Cap Included with Draw-Tite Hitch 75866

Is the Trim cap shown in the video for the bolt installed in the center of the hitch, thru the step bumper included? I dont see it in the hardware image.

Yes, a black rubber step bumper cap is actually included with the Draw-Tite Hitch # 75866. Although it's not technically part of the hardware kit, it is listed as item number 11 in the linked installation instructions and will typically arrive taped to the hitch itself.
Some GMC Sierra/Chevy Silverado models come with a step bumper cap, which can easily be removed prior to installing the center hex bolt, while some require trimming to gain access and allow the hex bolt and washer to be installed through the bumper.
The Draw-Tite Hitch # 75866 is a confirmed fit for your 2017 GMC Sierra 1500 with a factory installed steel step bumper.
