Remove, Inspect, and Reinstall Trailer Bearings, Races, and Seals
Question:
Do I have to use a punch and knock out any races or bearing seats in a 5 on 4 1/2 L44649 bearing 2,000 lb. axle? And should the hub just slide right back into place when re-assembling or is there a trick to it? Does dexter hub set 8-258-5uc1 fit a Sure-trac trailer with model number st6096sa?

If you are replacing your existing hubs with Trailer Hub Assembly, # 8-91-05UC1, you will just need to remove the old hub without having to remove the races. The hubs we carry come with the races already in their proper places.
If you are replacing bearings, races, and seals you will need to knock out the old races. I have linked a video that shows how our installer goes about this task. It will also show you how to put everything back together.
This hub will fit if your trailer accepts L44649 bearings and a seal that has an inner diameter of 1.5 inches. However, if you have a hub with 5 on 4-1/2 bolt pattern, this hub will not fit the existing wheels since it is a 4 on 4. You would need # 8-259-5UC1 (for 8 to 10 inch wheels) or # 8-258-5UC1 (for 12 to 15 inch wheels) like you mentioned in your second question.
