I checked with Curt who confirmed you can replace the 2 5/16 inch ball with a 2 inch ball # C48820 as needed with the Curt Pintle Hook with 2-5/16" Ball - 2-1/2" Hitches - 20,000 lbs # C45908.
If you prefer the Convert-A-Ball option like you mentioned, the Pintle Hook Combo with 3 Stainless Steel Balls - Bolt On - 25,000 lbs Item # PH1 is my recommendation. The hitch comes with 3 ball sizes: 1-7/8", 2" and 2-5/16" and has a towing capacity for 2" and 2-5/16" hitch balls between 3,500-10,000 lbs and the pintle has a tow capacity of 25,000 lbs. A mounting plate providing similar drop like the Curt Pintle Hook Mounting Plate for 2-1/2" Hitches - 10-3/4" Shank - 8 Hole - 20,000 lbs # C48348 is needed with this option as well. Below is a review video with additional information.
