How do you decide which length ball mount is correct? I have a couple ball mounts that vary in length from 8 to 11 inches. Now I am considering the aluminum one that is 7 inches long and am wondering if this will work

There isn't a set formula for picking out ball mount length like there is for ball mount rise/drop. Typically around 7 to 10 inches works for most people. Some people will go longer if they are trying to be able to drop a tailgate and there's a tall a-frame jack in the way.

Assuming you have a pretty standard setup and you have the rise/drop figure that you need worked out already a shorter in length ball mount would be just fine. I attached a link to a page that has all of our ball mounts too.

The capacity for the lock set part number #FA86-00-3660 that you referenced is going to be the max capacity the ball mounts these are designed for have. That would be 10,000 lbs total trailer weight and 1,000 lbs tongue weight.
