How long is the shaft from center of ball to center of pin. Will this work on my 2019 Nissan Pathfinder

The two ball mounts included with the etrailer.com Ball Mount Kit # 989900 referenced in your question have slightly different hitch pin to hitch ball measurements.
The ball mount with the 3/4 inch rise or 2 inch drop has a distance of 8-1/2 inches from the center of the hitch pin hole to the center of the ball. The ball mount with the 2-3/4 inch rise or 4 inch drop has a distance of 9 inches from the center of the hitch pin hole to the center of the ball.
Either of these ball mounts will work great with the 2 inch hitch on your Nissan Pathfinder. You will just want to make sure that the rise or drop on the units are sufficient to tow your trailer(s) level. I have attached a great article that explains how to determine this if you are unsure.
