You are correct that the 2011 GMC Yukon 4x4 with single speed transfer case cannot be flat towed as is. I've attached a photo of the pages from the owners manual to assist. It is logical to think because the 2 speed transfer case models can be flat towed without issue that dropping the drive shaft as you stated would allow you to safely tow your single speed vehicle. Without proper testing, I can't confirm this would be the case, but it is very logical.
If you decide to tow it, I recommend the following components for your flat towing system:
Roadmaster MX Base Plate Kit - Removable Arms # 3154-3
Roadmaster Falcon 2 Tow Bar # RM-520
RoadMaster 68" Single Hook, Coiled Safety Cables # RM-643
Roadmaster Diode 7-Wire to 6-Wire Flexo-Coil Wiring Kit # RM-15267
SMI Stay-IN-Play DUO Supplemental Braking System - Proportional # SM99251
Roadmaster Stop Light Switch Kit - GM Pickups/SUVs w/Non-Adjustable Pedals # RM-751421
Finally, you will want a high-low adapter. I've attached a link to your options as well as an article to help you determine the correct fit.
