Starting from scratch, so what would be the easiest type brake lines to install for a DIY? Adding brakes to a single axle boat trailer

Brake lines don't have to be difficult to run. I recommend the Kodiak Hydraulic Brake Line Kit - Single Axle - 18' # 18SI-BLKIT. This will give you one 18 foot flexible line and one 7 foot line and one 1-1/2 foot long line along with the tee fitting and clamps. So you will run a line from your master cylinder down one side of your boat trailer frame to the tee fitting. Then you will use the short line to the close brake assembly and then run the other across the width of the frame to the opposite assembly. If there is excess line that isn't an issue as long as the line isn't kinked.
If you don't yet have a surge brake coupler, make sure it is rated for the correct brakes on your trailer as disc brakes and drum brakes have different pressures and are not cross compatible. I've linked a couple of articles on adding a system to assist.
