The best way to select a weight distribution/sway control (WD/SC) hitch setup for your 7K horse trailer is to measure the loaded trailer tongue weight (TW) when it is fully-loaded and all set for the road with all your usual gear. Total trailer weight alone is not always enough to pick out a system so I suggest measuring the TW with a scale like # e99044 or by one of the other methods outlined in the linked article. A second help article and a video on WD/SC system are linked for you too.

To the trailer's own TW you will want to add the weight of any cargo in the truck that sits behind the rear axle. Since this cargo weight will act like trailer TW you need to figure it in to get a total TW that will let you choose a WD system with the correct amount of tension. You want your total TW to fall in the middle of the system's operating range.

A loaded 7K trailer will usually have TW in the range of 850 to 1000-lbs so a system like the Equal-i-zer # EQ37120ET (shown in the linked video) would be ideal since it operates effectively from 800- to 1200-lbs TW. This includes a 2-5/16-inch hitch ball and adjustable shank.
