If you have the B&W Turnoverball Underbed Gooseneck Trailer Hitch # BWGNRK1012 installed on your 2011 GMC Sierra 3500, then the B&W Companion 5th Wheel Trailer Hitch # BWRVK3500 mentioned in your question will install and be compatible with the gooseneck hitch on your truck. The reason you do not see this fixed 5th wheel hitch listed through your truck's fitguide is because of the 6-1/2 foot bed that your Sierra has.
Typically, with short beds like yours, a sliding hitch like the B&W Companion # BWRVK3400-5W is required to provide the clearance necessary when making sharp turns. The 12 inches of sliding travel will prevent the trailer from hitting the truck cab during these turns. Because of this, I recommend going with this sliding model hitch, as it will also install right into the gooseneck hitch ball hole in your truck bed. It has a gross towing weight capacity of 20,000 pounds and nice cam-action latching handle that will help to prevent binding.
I have attached a video demonstration on this 5th wheel hitch that you can also check out.
