Does installation of Draw Tite # 75270 hitch on 2016 Honda Odyssey require removing the exhaust system?

The Draw-Tite Max-Frame Trailer Hitch Receiver # 75270 that you referenced, which is a confirmed fit for your 2016 Honda Odyssey, does not require the removal of the exhaust system. It does require that the exhaust be disconnected from the rubber hanger on the passenger side of the vehicle for installation though (see attached picture). This is reinstalled after the hitch receiver is installed. You can check out the installation process in the attached video. The only thing that might need to be removed, depending on your model, is the covering on the driver side frame which can be trimmed and put back.
If you plan on using this hitch receiver for towing you can use the etrailer.com 2-3/4" Rise or 4" Drop Ball Mount Kit # EBMK4 which comes with a ball mount with the stated Rise and Drop, a Convert-A-Ball Interchangeable Ball System with a 1-7/8" and 2" hitch ball, a Pin and Clip, and a Ball Mount Bag. You will want to check out the attached article on ball mounts to make sure that this ball mount is correct for your application.
To finish out your towing setup you will also need some wiring as well. I recommend the Tekonsha T-One # 118521 which will give you a 4-Way flat connector to activate trailer lights. I have attached an installation video for this as well.
