which power steering cooler size fits 2000 mazda B3000 manual transmission?

Power Steering coolers are not vehicle specific items, so any cooler that fits in front of the radiator or air conditioning condenser on your 2000 Mazda B3000 Pickup would be a good choice. The larger the cooler is the better it will perform so I recommend getting the largest cooler that will fit easily. Measuring is required.
The Derale Power Steering Cooler, item # D12213, would be a good choice and you will need an area at least 9-1/8 inches Wide x 2-1/2 inches tall x 3/4 inches deep to install this cooler. I am sure there is room on your vehicle but double check to be safe.
For a cooler with more cooling capacity, you could use the Derale 4-Pass Tube-Fin Power Steering Cooler, item # D13212, which is 8-1/8 inches Wide x 5 inches tall x 3/4 inches deep. This fluid passes through this cooler twice as many times as the # D12213 cooler that you mentioned for greater cooling capacity.
