Towing a 5th Wheel Trailer with a Factory Gooseneck Hitch in a 2016 Chevy Silverado 2500
Question:
Will C16210 work in 2016 gm factory gooseneck hole?

The Curt X5 adapter # C16210 is designed to fit Curt aftermarket Double Lock gooseneck trailer hitches. I know Curt makes the OEM setup for GM but the adapter is not for that setup. There are other adapters that you could use though.
First, if you don't have the factory ball you can add one using # C60692. Then you could use the Andersen Ranch Hitch # AM3100 which clamps around any 2-5/16 inch gooseneck ball. This is the only adapter that offers true offset (moves the pivot point of the trailer). I have linked a video review of this adapter for you.
