Will this hitch work on a 07 Escape-Hybrid?

Yes, Draw-Tite trailer hitch # 36501 fits all models of the 2007 Ford Escape including your hybrid. I have linked a video showing an example installation of this hitch for you. I checked the owner's manual online for the 2007 Ford Escape hybrid and found that it has a towing capacity of 1,000 pounds.
If you plan on towing the recommended ball mount is # 36051. For a 1-7/8 inch ball use # 19256 and for a 2 inch ball use # 19258. And to add a 4-Way flat trailer connector to the rear of the vehicle you can use # 118426. I have linked a video showing installation of the wiring as well.
