Will Fifth Wheel/Gooseneck Wiring Harnesses Cause Backup Sensors to Detect a Trailer

Referring to part #41157 and considering an application to a 2015 Ford F150, will adding this part and keeping it installed when not towing the trailer override the vehicles back-up sensors?

No, the Hopkins Endurance 5th Wheel/Gooseneck 90-Degree Wiring Harness with 7-Pole Plug # 41157 that you referenced would not affect your backup sensors in any way as it would not put any load on any of the trailer wiring circuits.
It sounds like your backup sensors turn off when a trailer is connected so that your trailer doesn't set them off constantly while in reverse. The # 41157 would not cause your trailer to detect a trailer as it does not put a load on any trailer wiring circuits, which is how your vehicle knows that a trailer is connected.
