You can definitely use manual scissor jacks on your camper. These can either bolt on or be welded to the camper's frame. They will give you much more stability.
To find the right ones, you will need to know how much lift you need and your camper's GVWR.
For example, the jacks from etrailer, part # e99012, have a 24" lift and 5000-lb capacity per jack. I've linked to a video review of these jacks for you.

The only camper jack extension brackets we have are the Swing Out Extension Brackets for HappiJac Truck Camper Jack Systems # LC182496 which are swing out.

It looks like the HappiJac 4100 series jacks had 34.5" of travel, and there are some parts available to replace things in a pinch, but with newer trucks getting taller it might be wise to upgrade to a whole new set of jacks. I went ahead and took, and we actually don't have a camper jack system that will lift 8 feet high. The closest I was able to find is the:
-Brophy Cable Camper Jacks # CJ74 which has a maximum lift of 67", as well as a combined weight capacity of 3,000-lbs.
These jacks use aircraft grade cables, is made in the USA, and can be disassembled into 3 pieces for easy storage.

Based on the size of your 2014 Coleman 262BH camper, I recommend going with a jack rated for 3,500 lbs. This is the most common size electric jack out there, so the good news is you have quite a few options. Keep in mind, the jack does not have to be rated for the weight of your trailer because it is only lifting the tongue weight of your trailer, but I will admit that jack weight capacities really don't make much sense for trailer tongue weights or gross vehicle weights.

To support your slide out of your older camper, I recommend an Ultra-Fab Slide-Out Support instead of heavy duty jacks.
