You are correct that there is a bit of a difference in the trailer hitch. The Curt Class III Trailer Hitch # C13144 for your 2016 Subaru Forester has undergone a change in the length of the receiver tube. This is the difference you noted in the photos. You would most likely need an extension to be able to use a bike rack with only 4-1/2 inches from the center of the hitch pin hole to the closest part of the carrier. We have a video of a hitch installation on a 2010 Subaru Forester, see link, that shows the hitch pin hole on that vehicle ends up about 7-1/2 inches back from the farthest out part of the rear bumper.

The only j-style kayak carriers available with the capacity you'd need is the Rhino Rack part # S512 which has a weight capacity of 99 lbs. For max tongue weight you will need to stay under the least rated component so even though the etrailer Trailer Hitch Receiver # e98839 has a 525 lb tongue weight rating, I looked in the online owner's manual for your 2017 Subaru Forester XT and it looks like the max tongue weight they list for a trailer is 200 lbs so I can't recommend using anything where the carrier and cargo exceed that limit.

Roof rack makers generally do not recommend operating a vehicle's sunroof when an aftermarket roof rack is installed. Even if there is no clearance issue between the bottom of the crossbars and the top of the sunroof there would be a lot of noise from wind turbulence at the bars that would likely make you want to keep the sunroof closed anyway.
