I went out to our warehouse for you and measured both the Round A-Frame Trailer Jack part # TJA-5000-B and Ram Round A-Frame Trailer Jack part # TJA-2000-Z, the mounting plates are the same thickness which I measured at 3/16". That said, this isn't really where the jacks capacity comes from but rather the internal mechanism i.e. the jack screw. The center sections are different on the Curt Double Lock part # C607-604 and EZr Double Lock Gooseneck Hitch part # C611-624 for a 2015 GMC Sierra 3500. A submersible tail light can let water in, there is usually a hole at a low point so the water can drain out. A waterproof light should be sealed to keep out water.
For either type, you would also want to seal out water where the tail light wiring splices into the trailer wiring. Shrink tubing works well for this. You can also wrap up connections with electrical tape. Or you could use a combination of liquid electrical tape, # SWC50122, and regular electrical tape.
