In order to disconnect and reconnect the battery on a 2016 GMC Canyon for flat-towing without having to use any tools, I recommend the Battery Disconnect Switch with Lock part # 3376391005. The disconnect switch will get mounted in the engine bay so you will need to pop the hood each time but you don't have to worry about undoing any bolts as all that is required to cut power is simply turning the handle to the off position. The awning roller that is installed on the Solera 12V Power RV Awning Conversion Kit # LC434724 that you referenced could be wound too tight and the motor can't overcome the tension. The US Gear brake controller you have is for applying brakes of a towed vehicle and not for a trailer so you'd need to install a trailer brake controller like the Prodigy P2 part # 90885 that you mentioned having installed in your truck. This is a very common brake controller installed in motorhomes like yours because of how well it works and how reliable it is.
