Trailer couplers like the Dutton-Lainson # DL13847 that you referenced, which fits 2-inch balls, are available in two other sizes, 1-7/8-inches and 2-5/16-inches. We do not offer any couplers that fit a 2-1/2-inch ball and I could not find any information about this size. It is certainly not in common use today or in recent years.

I have not seen a 1-1/4 inch ball mount that offered 12 inches of drop. The most that we have is a 6 inch drop # C45028 (Class I or II) or # BM96 (Class I).

We do offer trailer wiring adapters that can allow connecting different wiring formats such as a 4-pole and a 7-way. But as you noted, if you convert 7-way vehicle wiring down to 4-pole trailer wiring you do naturally lose 3 circuits: 12V auxiliary power, reverse lights and trailer brake power.
