The Hollywood Racks RV Rider item # HLY64FR would be a great bike rack to use behind your Jayco Eagle 5th wheel. From the hitch pin hole to the center of the rack is 14-1/2" so you will have plenty of room for your 24" wide handle bars. If your second bike is wider than 28" you will run into clearance issues if you put it in the front position but should have no issues if you mount it on the outer rack.

Yes! You can definitely use a 2" hitch receiver reducer on your 2-1/2" hitch. For that route, I recommend either the Curt Hitch Reducer # C45405 or the Brophy Reducer with 7" Long Extender # HR26 (depending on your length needs). It is important to note that while the # C45405 does not reduce your hitch's overall weight capacity, the # HR26 reduces your hitch's overall capacity by 1/3.

For a similar landing gear set to the # RVLG-8000 that is available we have the Stromberg Carlson Manual Landing Gear Set part # LG-183708 which fits same dimension mounting brackets and has same 8k capacity. None of the options we carrying are going to work with an Atwood motor though as they are no longer made.
