For that size Dexter axle there are two seals that potentially could be the correct one with the only difference being the inner diameter. If the ID is 2.125 the part you need is # RG06-090, if instead it's 2.25 then you'd need the part # RG06-070.

I may have an option for you, but there is not specific lights for undercabinet lighting in an RV like yours.
If you'd like each individual light to have a switch I'd go with the # 328-K-1003WS which is a 3" surface mount light that'll work perfectly for under cabinet lighting. These have a built in switch so no need for a wall switch, and you can turn all of the lights on or have some on and some off.

I did some checking and your Cedar Creek Silverback 37RTH is 41 feet in length so for a cover that fits and provides superior protection the Adco Tyvek part # 290-34858 would be an excellent choice. For your AL-KO 6,000 lb axles, you will want the Kodiak Disc Brake Kit # K2HR858AE that will fit the same #42 spindles used on that axle. This kit will give you the calipers, discs, and oil cap, but you will need to get the bearings and seal separately.
